Either they've been altered by the addition of a spirit of some kind, or they have significantly higher levels of residual sugar in them after fermentation stops. These wines are, in a sense, reinforced to bash off the negative effects of exposure to oxygen. They will have varying degrees of sweetness, depending on their method of production, and they may be aromatically enhanced by the addition of herbs during the fermentation process.

Some of these wine styles are centuries-old and can produce wines that live for seemingly unnatural lengths of time, maturing slowly, quietly and elegantly.

Others have made their reputation as vital components in wonderful cocktails.

But fear not; hold tight, you're in for a delicious, smooth, relaxing and very lush ride.
