A beautiful, pale and perfumed Rosé, this is made from old, low-yielding vines that make a delicious wine that has bright citrus notes and flavours of redcurrants, raspberry and loganberry that are vivid and lively in this surprisingly medium-bodied wine.
'Chant de Lune' (Song of the Moon...) is wonderfully dry, fresh, and fruity, making it perfect to accompany lazy summer meals or to just enjoy as an aperitif. Santé!
Touraine is the region around the city of Tours on the Loire Valley. It is situated between the appellations of Saumur and The Central Vineyards (where you'll find Sancerre and Pouilly Fumé).
It is the Loire, one of the most significant wine regions in the world, which produces almost every type of wine style you can think of (possibly excluding Ice Wine), with light red to heavy red, whisper-light whites to unctuous rich whites, rosé, sweet, semi-sweet, sparkling, aromatised and fortified examples all coming from the amazing region that stretches from Nantes to the western edge of Burgundy. Included in this tapestry are some of the most wonderful historic producers and the home to some of the most important grape varieties: Cabernet Franc and Sauvignon Blanc (who together crossed to make Cabernet Sauvignon), Chenin Blanc, Gamay and Pinot Noir - all have claim to their roots on the banks of this river.
Guy Allion began his municipal farming in Touraine aver 40 years ago and began reducing other farm activities to focus on wine in the following decades. The winery is now run by his son and daughter-in-law. Cédric and Dorothée Allion run the estate which has grown since Guy originally started, from 6 to 27 hectares of vineyard. Members of the Terra Vitis organisation for better-than-organic wine production, their viticultural methods are resolutely organic and sustainable, and use minimum intervention in the winemaking process. This ensures that the wines are pure as they want them to be, offering their honest expression of this terroir.
The grapes for this wine are harvested at night (hence its name), which limits exposure to ambient air and retains freshness. Following a quick and gentle pressing, fermentation takes place in stainless steel vats, before ageing on lees for between 3 to 6 months. Intervention is minimal to ensure absolute purity and best expression of the terroir. Mission accomplished, we say!
